General recommendations for a diet that regenerates the small intestinal mucosa

Cow's milk, due to its high nutritional value, is the most important ingredient in feeding infants and young children. However, a significant percentage of them is also the main food allergen. It may cause allergic symptoms such as colic, diarrhea, vomiting, etc. Sensitivity to cow's milk proteins is found in 1.8 - 7.5% of infants, and in 3% of children up to 4 years of age. You can also be sensitized at a mature age.
The main reason for cow milk allergies is the biochemical difference of the protein contained in it from the milk protein produced by a nursing woman. Women's milk contains specific whey proteins (65%!), For which the infant is well-adapted. However, cows' milk, as well as other ungulates, contain proteins of a completely different chemical structure, which makes them difficult to digest for the baby and can be sensitized! Currently, up to several cow milk fractions are attributed to allergenic properties. These include: beta-lactoglobulin - constituting about 9% of the total protein content; casein constituting about 79-80% of the total protein content; alpha-lactoglobulin (1.5%), etc. It is particularly sensitive to beta-lactoglobulin, which is absent in breast milk. The mechanism of sensitization results from the fact that some of the infants of the intestine are so thin (they thicken later with age!). Thin intestines do not prevent the penetration of large portions of foreign cow proteins into the blood.The suckling organism perceives the intruder (antigen) in these proteins and tries to fight it! And this is an allergic reaction that causes allergic symptoms.
It has been documented that many times larger (i.e. huge) cow's milk proteins - against whey protein particles from mother's milk are recognized by an inexperienced child's body, as a germ or parasite (antigen) and strongly fought. For the treatment of undigested beta-lactoglobulin, the child's body produces special antibodies that can be on call for many months. Therefore, each time a child drinks cow's milk or other food containing this protein fraction, the symptoms of an allergic reaction may appear - colic, diarrhea, vomiting, etc. It should be remembered that although 80 to 90% of children "grow up" from allergy to cow's milk after 3-4 years of age, the rest are still sensitized. What is more, the effects of such allergy can have negative consequences even years later. You can also take into account the intolerance to milk, which causes the body allergy endless cough and blocked nose, problems with sinuses, etc.
Thirdly, we exclude refined sugar - (that is sugar beet and sugar cane). This sugar can sometimes provoke intolerance or even food allergy in children. It destroys intestinal villi, which contain cells that produce enzymes necessary for digestion decomposition and absorption of valuable nutrients. Absorption of undigested, complex protein complexes and others - such as the aforementioned milk proteins may cause intolerance or allergy. Refined sugar also has pathogenic properties that are detrimental to the gut, causing non-infectious catarrh, sinus complications, etc. In addition, refined sugar used systematically in large quantities (candies, sweetening drinks, etc.) adversely affects the nervous and immune systems of children.
Until the end of life, avoid the so-called highly processed foods - i.e. which includes not only chips, or "refined" artificial flavors, fixatives and fragrances, flavored chocolates, sweetened beverages, flavored cheeses and yoghurts, but also refined sugar, husked rice, fiber-free bread made of white flour, especially cakes and other confectionery; as well as cured meats and preserves with a lot of enhancers, additives, stabilizers, dyes and preservatives.
